Is it possible to copy the company without item ledger entries?
The end goal is to delete all the SKUs from the copied company and leave only the items. That is not possible if you have a single ledger entry with that SKU.
No. The easiest way to achieve your goal would be to write a tiny extension that will delete the SKUs without triggering further business logic.
Provided we are talking about a test environment only 😉
