Where can I enter the first name of a contact so that it can be used on a mailing ???

It would need a modification to do that. One field for both forename and surname is visible as standard. The fields do exist though.
Use the standard fields
If you are talking about the Contact card, you can first click ... after Name, then you can enter the First Name.
