Sales over picking

Hi,
We have scenario that - We ship 10 bottles (Batch and serial enabled) to customer. Each bottle is meant to have 1000 g of FG, however this could vary. For e.g. One bottle could have 1010 gms while other could be 995 g as well. 
Item's inventory UOM is set up as (g)
When we ship 10 bottles (EA), the total Qty in grams could be either more than 10000 g or less than that.
When we release SO to warehouse, it reserves only 10000 g (which is on sales order line) we need WH work to be created in EA, this we are able to achieve using unit seqnece groups and unit conversions..
But we don't break the bottles and sell. 
 
With over picking - WMS app asks Qty to enter first.. Our concern is, unless worker scans serial number, they wouldn't know whether the picked item is going to require over pick or short pick.
The expected result we are looking for is - Worker scans 10 serials for 10 bottles to be shipped, and Inventory needs to get sold in g unit accordingly.

    The functionality you are looking for is called Catch Weight, and I imagine it would be quite difficult to enable it on items after you have gone Live. Any idea if your company looked at Catch Weight? Maybe they did and the solution you have now was considered the least worst!

    Catch-Weight allows managing 2 unit of measure in Inventory: Handling unit (bottle) and the Weight unit (g).  Catch weight is meant for cases where you pick the handling unit but will charge you customers by weight.   If the SO price is per g but you pick in bottle, Catch Weight is a strong contender. 
     
    If you price and pick per bottle (boxes, PL etc), then the inventory UoM should likely have been "ea".  Understanding that it is kind of late for that, if the quantity of the SO Lines are in Ea, Unit Sequence Group ID on the item to have work created in Ea. The Unit Sequence Group would have sequence 1) g as the base unit; 2) ea as first handling unit; 3) Box (if necessary) as next handling unit.  For SO lines in ea, work would be created in ea but the transactions in background would be in g. 
     
    You will still be in the same situation where you are picking in g (no way around it if inventory UoM is g), so the overpick will still be required. There are 2 options here: 
    1) for the very last bottle, have the warehouse worker change the work order quantity (trigger overpick manually) before the last bottle is scanned; or
    2) develop so that the overpick is automated when scanning the last bottle
