Item ship start date and Item sell start dates - how to use

I've found some demos online of the item ship start date and item sell start date.  From what I've seen, this should drive functionality to either stop a sales order line being entered, or manually update the ship date so that it complies with the ship start date listed on the item record.
 
Cannot get it to work in either our UAT environment or a demo box (plain D365 database).  I tried setting the start and end sell date as a range, or just the start date.  The ship start date doesn't seem to affect the line's ship date at all.  I found some forum posts online that seem to imply these fields don't drive any functionality, but the blog and video below say otherwise.  Is there another configuration that is needed to "activate" these, more or less?
