We have multiple companies all using the same server. Can more than one person perform the year end payroll update at the same time? Person 1 on Company A, Person 2 on Company B etc.?

I have the same question (0)Wellllll.... You have to install the payroll year end update on your server, and then you have to update all your company databases. That is step one, and is usually controlled by a single person, although parts of that process can (optionally) be performed on multiple computers.
Next the update has to be installed on all the workstations and/or terminal servers you might be using.
Once the update is installed on all workstations, and all the databases are updated, you can perform the actual year-end closing routine.
What you are probably asking is whether more than one person can perform the actual Year-End Close routine, and the answer to that is YES, they can.
Be sure to follow these steps when performing your year-end closing: support.microsoft.com/.../850663
