I have restored a backup from live server to Local GP install and local SQL server. The SQL collation is same as live server after restoring the back as a new database in local, ran GP utilities but when I login to GP the new company is not getting listed. What I am missing.

Tom, if I were you, my handle would be 'Maverick'. I'm sure you've never gotten that before :)
To chime off of what Richard said, the company needs to be in SY01500 but if you don't want all companies restored you can run utilities to create a new company, call it the same as the live company being restored and then restore your backup over the newly created company.
By not restoring Dynamics you'll be missing some key settings that match your live company like security settings but nothing that can't be over come.

To play it safe copy all databases. So I would drop all existing GP databases and then copy over all production databases.

Thanks so I can copy both Dynamics and company from live to local install. I have created the sample company on local do I have to remove that please confirm.
Whatever companies that are listed in the DYNAMICS.SY01500 tables are what you will see listed in GP Utilities when you log in as 'sa'. You must restore both the DYNAMICS database and your company databases.
