All the pages which requires sign-in will be redirected to login page.
Please note that ow you should be able to hide button in cart page

I haven't personally tried it. Can switching the page to "Require Sign In" help ? If the user is not signed in, the system will direct to sign in page when the customer tries to checkout.
Is this still true at the end of 2022? Is there really no way to configure the system to not have anonymous checkout?

This functionality cannot be disabled but you can try to customize the modules and hide the option.
