We have more than one solution in our legacy web client. I am using the "Create Unified Interface using an existing environment" and I can pick only one solution.
How can I create Unified app for all those solutions?

Hello Ann,
If you have already created a publisher on your development environment, you could re-use it.
Otherwise, I would advise to create a new publisher (e.g. the name of your company).
You'll find more information on solutions, here:

Looking into this I think I should have said multiple publishers.
when creating the app should I use the "Default Publisher" or one of the custom publisher we have ?
Hello Ann,
What do you mean you have multiple solutions?
Technically, solutions are containers for customizations. You use them to deploy customizations from one environment to the other (e.g. from development to production).
Apps can be part of solutions. So you should create your apps in dev and deploy them to production.
In order to help, have a look at this article and related pages:

Also, if you are using Dynamics 365 Sales, Customer Service, Field Service or Project Service Automation, they each have out-of-the-box applications that are already on the Unified Interface that you coud use.
Example for Sales Hub: https://appsource.microsoft.com/en-us/product/dynamics-365/mscrm.d427d98b-6082-4358-bc85-731fe3337f27
