Hi,
We our currenlty using online D365 but I wanted to change it in on-premise version.
I cannot seem to find a documentation that includes link to on-premise installer

Hi Jane,
You cannot "change" online D365 to OnPremise. If you need an on premise version then you need to install it which wouldn't be easy as it requires a windows server, active directory, SQL server, SSRS server , IIS etc. You can refer the below link-

Also, this install will be a new CRM deployment with a sample org. If you want to have your online version here then you need to do a migration of customization & data from online to onpremise.

After you install CRM 2016 (which is version 8.0), you will need to update your installation to Dynamics 365 (v8.2)
