I was hoping to add a few custom fields to the Price List Item: Product Price List form, but it appears I am blocked from doing so?
is there a way I can do it?

I can create new fields and add them to the "Price List Item" form when doing the customizations from https://make.powerapps.com/

There might be a required update to do in order to be able to create new fields and extend this entity form.
