Hello
I have exported a managed solution from Dynamics CRM, the publisher states that :
Default Publisher for <My Organization>
How can change this to let say my name or something else ?

You will need to change the publisher on the organization that you have exported from. You can't change the publisher once the solution is imported unfortunately. To change the publisher you simply open your solution and change on the publisher lookup field.
