RESERVE STOCK AGAINST A SALES ORDER

Hello,
 
I am looking to know to to use the reserve quantity function/stock allocation function - so that once we receive stock against an order we can reserve/allocate it against a sales order and know the quantity in dead stock.
 
If anyone can guide me then that would be very helpful.
