I'm trying to run a workflow that sends an Email out to contacts located in a subgrid list in my opportunity entity. Is that possible?

You could use Distributed workflow to send email to all related records.Its a custom workflow. You can find below post about how to use this workflow to trigger on all child records.

In the subrid now in CRM 2013 (if you use CRM 2013 or higher), no more contextual subgrid ribbon, this feature (in CRM 2011 got this feature) has been removed recently in the newer version, so using ribbon in the subgrid is not possible.
The only way is using associated view ribbon.
The user must expanding the view from the selected subgrid.
