How do we bypass validation logic written in the base extension of Business Central?

I have to Skip/Bypass the validate method logic written on opportunity update and write my own custom logic.

For Example:

I want to remove the selling & cost $$$ requirement for the Bidding stage.

You have to use available publishers in the base code to skip the code using IsHandled parameter.

In your case, you have to subscribe to the below publisher.
