Mobile device steps - Select fields to send not working correctly

I am trying to add detours and select fields to send for various mobile device steps, but for some reason I cannot see any values in the drop-down lists for /Paste in..../. See image attached.
 
Anything I have forgotten to setup?
 
 
I don't seem to have any promoted fields available either:

 
Appreciate any help I can get here - been stuck for a while on this.
