Hello,
It's super easy to add new values to option sets in the new interface but how do you sort them alphabetically?

As of today, there is no option to alphabetically order option-sets labels in the new maker experience in https://make.powerapps.com.
There is a workaround though: when you are in your solution, you can click the "Switch to classic" button to open the legacy solution editor and update the option-set using the legacy UI, and have the "A-Z" button available.
