If you use the CRM for Outlook, the workflow sending email you use who is the sender?
The sender needs to be a valid user and needs to run the CRM for Outlook first in order to send it out.
So if this is like an automation process, I suggest you better you configure either Email Router or Server sync for a dedicated Queue.

Campaign : Will have a more detail info and target, such as planning activities, budgeting, multiple activities and multiple target as well.
While Quick Campaign: Will have more minimum info to be filled, well you just define the single activity and choose your target.
So if your case no need the budgeting, complicated things, additional info, just blasting a single email activity to a target list then Quick Campaign as per its name, should be your best choice.
If you want more detail info, additional custom fields, budgeting, planning, multiple activities in one campaign with many marketing list target, then Campaign is a must to be chosen. Because you cannot mix multiple target type for quick campaign, such as prospect, existing customer (contact/account).
Both are for same purpose, for Marketing and blasting and you can convert them as the Campaign Response as well.
