Is there a way to turn on all entities and fields to start auditing rather than going to each field one at at a time?
Hi USA80,
For fields level auditing, all fields will be enabled for auditing automatically if you enabled the entity.
However, there is no OOB method that allows us to enable auditing for all entities at once.
Or you can try to enable auditing through web api:

ON https://learn.microsoft.com/en-us/power-platform/admin/manage-dataverse-auditing#configure-auditing-for-an-environment you have an interesting note: there are three levels of auditing. Environment (which can be set once on the Power Platform Admin Center). This brings a certain set of entities and fields to auditing. Then you have Table and Field specific auditing that needs to be enabled individually.
