Has anyone found a way to hide, or at least disable, the Share button that is present throughout Dynamics?

Could you not update the Security role(s) of your users to not allow share:
That should remove the button from the ribbon also (I think)

If you want to hide the share button for specific users/roles you can do it using security roles as in the administration of Settings entity.
Or do you want to hide the button for all the users in the organization then you can use
the ribbon work bench

If you want to hide the Share button for all entities, you can use Ribbon Workbench with Application Ribbons:
First, create a solution and from Client Extensions -> add Existing Application Ribbons
Then, use the Ribbon Workbench with the solution and use Hide Action for Share button (https://ribbonworkbench.uservoice.com/knowledgebase/articles/102796-5-hiding-unhiding-ribbon-elements) or you can add Display Rule/Enable Rule for Show/Hide button base on some custom condition
