Was wondering if anyone knows how to export records from the Audit Summary View in CRM for deleted records?

Hi,

That sounds ominous!

Although you could use the Audit Table in the Org_MSCRM Database, It's quite hard to reconstruct the records. The easiest would be to write a tool using the SDK Audit messages - msdn.microsoft.com/.../gg328218.aspx

There is no built-in feature to recover deleted items from the audit trail, there are a number of third party solutions that could do this for you:
