Changing Inventory Costing method from AVG to Standard for all parts

Is it possible to change the costing method from AVG to Standard for all items? I mean we want to change our practice from "Avg" to "Standard". If yes what are the risks and challenges? Also if it is possible what is the best method?

Note: we do not want to create a new item No since this is for all items we have.
