When using the version of this scale that weighs to the 0.005 lb, does RMS recognize this thousandths place? Or does it stop at hundredths?

RMS is compliant to the 1000th place on weights.
Use the builtin opos drivers for the scale.
I have numerous customers that use the 6720 and the 6740 scales.

Wow, really? I was never able to make those OPOS drivers work. I've always used the Weightonics OPOS. Any tips?
Make sure you are using serial connection. Don't use a usb to serial adapter.
Select: SMS.OPOS.Scale.Berkel and give it a name
Then select your capacity, like 30lbs. Com port settings are avery/berkel default, just change the port.
Check the box for default scale.
That normally works for me.
