So there is an 'Address' field on the contact form that when I click into it expands with several other fields to fill out:

Street

City

Zip

etc...

How can I add and remove the fields that it displays?  I can't find where to do that in the form editor.

Addres1 is a composite field . You can get this composite field in acount and contact.

If you dont want that field just remove the field in the contact form instead you can add Address1 related field on form.  But I think I think Composite field gives a Better look an feel

I like that when I click on 'Address' it expands to add items such as the street and city... but I want to add and remove certain fields that it displays here.  Is there a way to do this? There is only the 1 field for 'Address' on the actual form in the form editor...

Addres is a Composite Field and changing that field is not suported. You can finf that address field in account and contact and you can not Create a composite field by youself . This is internal to CRM

    Hope this helps

You can try using business rules to hide the fields you don't want:
