Hi,I've created a workflow to create email entity automatically,
Is possible associate a email template created previously to the new workflow?

In your workflow rather than choosing create new email select "Use template" option that will let you add the template you want to use to send out email
Select "Use Template" from drop down then click on the properties to select your template
2.You will see all the email template related to the entity here.From the list choose the one you want use. Make sure you change the template type from global to your entity, to see all related templates

This solution fixes when you create a send email step, but I'm creating a create entity email, because I don't send the email in the proccess.
I don't know if I can create a send email step and don't send the email.
There is no way to choose template if you are creating email entity using OOB. But you can write custom workflow step to create email using template.

Thanks Chitra, this example sounds good, but the process that i'm implementing is a bit different.
I set a new button in the quote form for sending a email. This button create a new entity email, but not sends the email. (The user will send the email after).
I've deployed a plugin (postcreate emial) that does several actions in the email, in this moment is when i would like to change the template.
Meaning, the email is created when i want to change the template.

If you want to use template after creating email its very simple .. all you to do is click on insert template and choose the right temple to apply

This way works very good, and i can replace the subject and body, but this method has a bit problem. If you has a template with variables, for example: "Dear Mr. [quote!contact] you must do the maching by code.
So, this is a very good solution.
