Is there a way that I can send the phone number from an incoming call from my phone to CRM and have it record it as an activity against the contact with that phone number?

Yes,Here you can create a phone call activity with that phone number and you have to select a contact(The person who called you) in the "Regarding" Field.Then you can see this phone call record in contact activities.

I agree with Suresh,
We can create a phone call record in CRM and set regard to the contact from where you received this call.
There one more way you can do this.
Directly go to the contact record from where you received the call. Open the record. Navigate to Activities and Add a phone call.
