Is there any way to disable the thumbnails in a dashboard list, or disable mobile list layout entirely?

One of my dashboards is showing alphabetical thumbnails next to each record in the list when the responsive design gets narrow, and my org has no use for this visual.
Is there any way to get rid of it? I checked this documentation but don't see anything about it.

Ideally, I want to disable this mobile list layout entirely if possible so it shows the same compact subgrid view no matter what width the browser window is... but I also realize it might not be possible in Unified Interface.

What percentage is your zoom set to?  We've had this complaint, if you zoom out it turns back to the view.

You should be to achieve this by setting the "Read Only Grid" control on your view and by setting the reflow behavior to "Grid Only":
