In our CRM 2011 Installation performing a query in Advanced Find, opening the results, choosing 'Export' and then "Dynamic Worksheet" produces an XML file. I can open this in Excel, but is this a setting that can be configured or does exporting dynamics sheets always produce an XML file?

In CRM 2011 it will dump to an XML file. It is not until the later versions (CRM 2016, I believe) that it will dump to xlsx files. There is no "setting" to be configured in CRM 2011 unfortunately.
