I wondered if anyone could tell me how to make the printing of the customer's receipt optional? Is there a setting that would ask the cashier after the transaction if they want a receipt and only print if approved or wanted?

Yes, there is a setting. In SO Manager, for each register under Database, Registers, Register List - On the Receipt Printer tabs, under Receipt Printing/Sales Receipts choose "Print only after asking the cashier".
