Hello,
we're planning to upgrade our existing CRM 2016 On Premise (version 8.1.0.359) to Dynamics CRM 365 On Premise. Our setup includes a SQL 2014 database cluster system.
Is there any article or best practice related to our migration scenario? I'd be very grateful, I just found some articles by MS but they're not deep enough to really gain some experience for the upgrade plan.

I've updgraded from 8.1 to 8.2.4.6 and we were facing lot of issue in Jscript and also in BPF because of some changes.
So I recommend that you of course update you DEV enviroment before and do good test on your system.
But upgrade to version 9.0 is more, You need to upgrade you SQL server to Microsoft SQL Server 2016 Standard, with Service Pack 2
and supported version of windows is Windows Server 2016 Standard

So I think your best solution is creating new CRM enviroment and move database,
