Is there a way for me to add attachments in a quick create form in a subgrid? Or do I have to go to the record in the table to add it?

As far as I remember you will have to create the record first and only after adding attachments.

Unfortunately, you can't add attachment in the quick create form, you have to go to the main form of the record to add it.
When you add attachments, you add one records to one sub-grid related to Attachments table actually:
However, you can't add sub-grid control in the quick create form, which is by-design:

I dont see attachment even after creating record in subgrid. I only see it in the actual table.

Sorry let me rephrase the question. How can i add attachments for a record in the subgrid? I can only add it in the main form in the actual table, but not in the subgrid. If not OOB, is there a way to do it with javascript?
Actually, attachments are child related records for the record in the sub-grid.
If you want to show attachments related to the record in the sub-grid, maybe you can try to enable nested editable grid control for the sub-grid:
