Customize "Open with Excel" List

In Sales Quotes, it's possible to export the Sales Lines through the /Open with Excel/ button.

 
It's possible to customize the excel report by adding other fields without adding that fields to the web grid view?

    I don't believe its possible to customize this report out of the box, as by default it simply opens all the fields visible on the page, and its not defined for a specific page. Perhaps you can use the Edit in Excel function instead? As in that file you can edit the visible fields and then save it. Otherwise, you can look at getting a developer to create a new excel report for you with the required fields. Or you can also use configuration packages to export only the fields you need.

    You cannot customize action (as it's a platform action) but you can utilize Excel Layout to export data in excel.
