If I make the Item table view only for certain users, would it cause any errors if they are posting transactions on items and production orders?

How should I make it so they can’t make any changes to items?

No it would not cause errors so it will be fine. This would only mean that they can't edit the item card i.e. edit existing items. Not having insert permission would mean they would not be able to create new item cards.

Posting item transactions inserts or edits records in other tables such as the item ledger entries table, not the item table.
