From the Released product I released One Item in one company and its two Variant but while I create purchase Requisition it showing the entire variants which is not released in that Company.How we can restrict this ?

Are there any recent customisations dor for PR. You need to get it debugged from developer. If there are no customisations then raise a Microsoft support ticket.

I think this is bug from the system because before we could see only the the released variant what I released. If it is bug how can it be fixed ?
Note that the purchase requisitions is a global feature. It is not restricted to a single legal entity. The lines has a buying legal entity field which should restrict the selection to the released products and variants. If it is showing more variants, then check if it has been released by accident. Otherwise, I would consider it as a bug.
by default, only released products and it's variant is available in PREQ in a legal entity
Items that are visible on the purchase requisition are controlled by Purchasing policy and the procurement category attached to the Product. Only released product variants are available for selection. Can you please share the setup you have done as well as some screenshots to help us understand the issue. Below screenshot shows only released variants for selection
