we are transitioning from QuickBook to Business Central
our local currency is CAD but our items (inventory) are from vendors in the State

You have to register a vendor pricelist that is in USD for each vendor.
Your inventory valuation will always be in your local currency.
But you can of course register your purchase orders in USD then the currency exchange rate will determine the inventory value in your local currency.

Hi, BC supports foreign currencies. Below are a few key pages that you may use, hoping to give you some hints.
    Currency in Purchase Prices:
    Currency in Vendor
    Currency in Purchase Order
    Currency in Payment Journals

    Thanks.
