What would it take to change the "Ranges:" option to change (or maybe add) the Document Date to GLPOSTDT?

You can't change/add any fields (GL Posting) to existing GP Drop-Down list field. For this case, you need to create a new customization.
Better you can view the report from Smartlist with specific GL Posting Date.

Better way to view the report via smart lists through specific parameters(GLPOSTDT).
Additionally if you have deployed SSRS reports through reporting tools setup, then you can view the standard GP report through GLPOSTDT as parameter.
else as Soma mentioned as to create a new customization.
I think no standard SSRS report available for "Print Sales Documents". Better you can use Smartlist Report.
