Auditing the deletion of items in a cases timeline

Good morning,

     I have enabled auditing in Dynamics 365 however, I am not seeing any delete events when a post, note, or activity is deleted. 

     What I would like to do is email a notification when a post, note, or activity has been deleted and capture:

a) who did the deletion.

b) the contents of the item deleted.

I'm pretty sure I've missed something obvious, so any pointers in the right direction would be appreciated. Thanks in advance.

    I found the obvious part that I was missing. I've included screenshots of the process I created to notify us if someone deletes a note from a case. Thank you.
