Hello, in my job they're about to buy Dynamics GP and I would like to have some basic docs to read or videos to watch and know something about this product.
Is there a link with any of those things?

There used to be the Microsoft Virtual Academy where you could find a few training videos about Dynamics GP (2013-2018), but recently this has all been revamped by Microsoft and those videos are gone now..
On This very Dynamics Community forum, on the top you have a menu entry called "Resources" which will direct you to various places where you should be able to find training material and online documentation about GP...

MVA was replaced by the Learning Academy : https://docs.microsoft.com/en-ca/learn/
And YouTube is of course your best friend when it comes to training videos as there are hundreds of recorded topics around GP, by various partners or Microsoft itself.
