Regarding field on tracked email keeps reverting back

Hi All,
 
We are using Dynamics 365 v9 online version (cloud).
 
We are having an issue with email tracking where the Regarding field keeps reverting back to the initial value when the email was first tracked.
For example, an email is initially tracked and Regarding field is set to an existing record from one of the entities (not Case/Incident entity).
Then a Workflow/Process triggers and creates a Case record and set the Regarding field to that new Case record.
All good at this point.
 
But after a while, the Regarding field is set back to the original/initial value. The update is done by the SYSTEM account.
There is no consistent amount of time this happens. Sometimes, it happens just after a couple of minutes and sometimes after few days.
 
This issue occurs in both manually tracked email or for bulk tracked emails.
 
Any ideas what is at play here and how we can avoid it?
 
Any suggestions are greatly appreciated.
