Is not posible to create workflow in UCI?

It is possible to create a workflow, but you need to go to "Advanced Settings" to get to the processes (still on the legacy web client).This is described here: https://community.dynamics.com/365/unified-interface/b/unified-interface-team-blog/posts/quick-tip-how-do-i-get-to-the-settings-area-from-a-unified-interface-app
As a side remark, have you considered to create Flows in Power Automate instead of workflows?

I hope it is available as soon as possible in a unified interface.
The flows are a bit more complex because of the type of user that has to create them.
I strongly advise that you consider Flow as this is much more integrated, scalable and modern. New investments no longer go to workflows as they somehow legacy platform capabilities.
