Can anyone tell me how multi-entity management works with a single company database that separates entities by a company segment in the account setup?

Are you referring to the Binary Stream 3rd party module? If so, their website may provide a summary of information that would be helpful to you. www.binarystream.com/multi-entity_management.asp
Out of the box, GP does not put multiple companies in a single database. Each company would have it's own database, but some intercompany transactions can be done and there are tools to replicate/synchronize the master records. We'd need to know more about your requirements to know which path would be more appropriate.
