Is Windows Account for persons with their own Active Directory and the Organizational Account is for persons with Azure AD?
Also, is there any way for me to see what was selected when GP Web Client was being installed through the add/remove features of the GP Install? I am not sure if Windows or Organizational was selected when GP was installed originally.

Yes on both counts.

Not through the Add/Remove Programs feature in Control Panel, but you can run Dynamics GP Utilities and you will see what authentication method was selected. Choose the Manage User Authentication option from the drop-down list in the Additional Tasks window, after you validate the system version.
