What is the standard amount of hours it takes to complete an upgrade from GP 10 to GP 2010? I know it varies depending on third party integrations, but what is your best estimate for a simple implementation with no customization?
Also, is there any easy to follow documentation about best practicies or the process to complete the upgrade?

As a consultant, my normal time quote was for 40 hours. Basically to get a test environment setup, migrate over the data to the test environment. Then do all the pre-upgrade tasks. Then do the upgrade. Then upgrade the 3rd parties. Plus you want to download all the latest service packs and make sure there is nothing new (hot topic) that came up since you did a test upgrade. Upgrade the reports dictionaries, bring in any sql views, any customizations copy over the security to the test database. And you want to get all of your registration keys setup and working so you know you won't have any issues. If you are migrating from FRx to MR the test environment is the way to go. And get your accountants to test all your reports (no panic time at month end).
The real upgrade was usually 14-16 hours. Basically like everyone is saying. They have already worked out any issues they ran into on the test upgrade, All the dictionaries are already upgraded and can be packaged and brought in after you do the upgrade and you have all the keys ready to go from the test. The time it takes is usually installing the new client and the 15 -20 minutes per database. Plus backup, backup, backup after each step. Once you have performed all maintenance, once you have upgraded GP, then once you have upgraded all the 3rd parties, But if I had 20 databases to do, yes, that meant I was going to have to add additional time. So plan accordingly.

I can only second Tim in this... it depends on the complexity of your existing GP installation. We have 7 company databases and 2 test companies. Average, the upgrade process with the GP utilities takes about 20-30 min per company. My largest DB is about 13Gb, but I think that the size doesn't make a huge difference.
The rest is essentially about debugging the modified forms & reports that may have been rejected by the upgrade process, due to structural changes in the tables. That is the portion that took most of my time, since I've over 100 modified reports (although not all are really required, but I'll do a clean-up after the migration). The deployment of the GP client goes fairly well, about 15 min. per workstation, again depending on how many 3rd party modules you have to put after the basic installation.
Testing in a lab environment is the best way to figure out and write down all the road blocks that may arise and their solution or work around.

There is no standard. So many factors to consider...
I just completed an upgrade GP10 SP2 to GP10 SP5 to GP2010 FP2. Lots of companies and third parties and large (+4 GB/company) databases. The basics took 16 hours to complete. This was well planned and documented and practised 4 times. GP Clients were set up ahead of final migration. It really went well.
Set up a test environment (if you're able) and time it.
