Is there a known limit or an official recommendation on the maximum number of domains that can be hosted on a single instance of D365 Commerce Site Builder?

There are no limitations - You can have n :1 retail channel to site mappings and technically host multiple domains in the same CSU. However, when you need custom domains attached to the sites (not the default xxx.dynamics365commerce.ms) there might be concerns raised as the recommendation is to have 1 domain per CSU. I would check with your Microsoft account contact to see what they are allowing. Please note that the scalability of the application/speed will also impacted if you have deployed too many sites on the same CSU and trying to serve extremely high-volume traffic from multiple/global regions.
