How is the Quantity on Hand field updated on Product Inventory?

This field ideally is meant to be integrated with ERP (AX/NAV etc.). However, you can still update it by a little tweaking. Follow the workflow below:
Create a workflow on order product:
Trigger on creation
Check condition: Order Product>>Existing product contains data && order product>> order contains data
Update Existing Product>>Decrement 'Quantity on hand' by 1
Note: You can run/create this workflow on Invoices as well, as per your requirement
There is a quantity on hand field on the product. This is not used by Field Service. (out of the box)
But your question (I think) relates to the quantity on hand field on the product inventory entity which is effected by stock receipts, transfers and using stock on work orders within Field Service. The post below should give you full details of when / how this field is used. (Along with allocations etc.)
