Hi,
Could you please help me understand with simple real time scenarios where you would use Associate and Disassociate messages?

HI,
Associate and Disassociate messages will be used when you are adding or removing record from N:N relationship.
for example, when you have students and courses connected with N:N relationship, when student added to course then associate message will be used, when student is removed from course then Disassociate message will be used.

Associate message is not associating 2 records through N-N relationship. OOB example - relationship between opportunities and competitors.\
Disassociate - opposite scenario - when association exists and you want to remove that association.
