With the new funcitionality supporting multiple productions enviroments, we have the need to change outlook add-in tenant configuration for different users.
We have seen several articles suggesting that this can be done by reinstalling the add-in with the assisted set up.
We have log out, tried different browser, dowloaded the manifest file changed the parameters that define the URL. But nothing is working.
Did anyone mange to connecto sandbox or other production enviroment?

After performing several tests, it is logical that you should wait for it to propagate through the exchange servers.
Finally, get it by downloading the sandbox manifest from Business Central and add it manually from Outlook -> new message -> ... -> add-ons -> my add-ons -> add add-in from file.

Yes, it can take a while. The Exchange Online does tell us 24hours to propagate but typically it is faster.

I've found that you must Uninstall the current extension, and then wait for an hour or two before installing the new one. The uninstall has to propagate through Exchange online servers before you reinstall, or it will simply reinstall the existing add-in from cache (same URL\environment installed).
