In my client environment i could not able to view the activities of customer in collection coordinator workspace, if i select specific customer then activities appear specific to customer. Am i missing any configuration. Where as in demo contoso environment i could view all activities in the workspace even is specific customer is not selected.

I find it otherwise. As soon as the workspace is opened, there are no activities. You get the activities only after choosing the customer-id
The grid remains empty without a customer-id.
And if you remove the customer-id the grid goes back empty.
That's how the standard system is behaving.
If your system is behaving different, that could be for three possible reasons.
1) you could have a customized system
2) you may have a recent feature turned on (that we are not aware of)
3) you did not observe it correctly and you may want to re-test.
