Recording notes in the customer for interactions about credit collection

We are looking for a way to record interactions (emails, phone call transcripts etc.) with the customer about the collection process in the customer entity in dynamics F&O. 
The notes field is unfortunately not enough as we'd like a way to structure the information by using a note entity for each interaction, including the date and other information. Does anyone have a suggestion of an existing solution to this?

    Hi,
     
    I had the same request from a customer and for us the best solution was to use the Case management associated with Credit and collection (I did not find a step-by-step explanation but I found this video with an overview to give you an idea and make you understand if can be of help in your case https://unifydots.screencasthost.com/watch/cYQFcIJmdv ). Keep in mind that you do not have to set up everything, for example we used a very simple version. The thing that we found useful was the poossibility to link the customer or also the transactions to the case, see them in the Credit and collection workspace and also the logging possibilities are quite neat (the "Activity" column can be customized and you can enter the values you want):
    we kept simple the activity flow and the process because we were not interested in that.
