I am new to Dynamics and D365. How can I change those values, seen in the screenshot? A screen record is very welcome :)

I don't see much from the picture, but it seems like an enumeration type to me. What kind of change do you want to do to it?

You first need to find if you system allow this enum to be extended. If yes, then try link below, it has detailed steps.

Are you trying to add a new value to the enum or are you trying to modify the labels etc.? What's the exact request?
Yes, enumerations are literal equivalents in X++.
