Hello,
I have experience developing in AX before but that was version 2009 and quite new to F&O and LCS. We've just signed a new customer for supporting their current D365 F&O. I'm aware that the LCS is the only way to manage the F&O environments. We're in transition stage right now and I don't know what questions I need to ask for LCS handover. Customer LCS is currently manage by their previous partner. May I know what questions I need to ask or if there's any list of question for hand over the LCS to us. Your help is highly appreciated

It's good to get information about the environments and their purpose. If there are Cloud hosted environments, it's good to check if they are in customer's or previous partner's Azure subscription.
Azure DevOps is very important, even though not part of LCS. Who owns the ADO project? All the source code is there, as well as tasks where you can find a lot of useful information.
Best was is to get the implementation project and use the stages and task with activity details to prepare your checklist

Thank you very much for the information. I will add those questions in my list. Do you think it is okay for the previous partner to show us how did they do the deployment from DEV>TEST>PROD environment? I know there's information on the internet how to do this, but I think it is better if they show the deployment to us and try to record it. Many thanks again for your help Nikolaos.

Yes, build and deployment process should definetely be discussed.
Anyway the build process (build pipeline) is stored in ADO so if the customer owns the ADO you will get it and will continue to use the existing process / pipeline. It's very important to keep the existing ADO or you will lose a lot of information and code change history.
However it's not so much related to handover of LCS, it's handover of ADO. In the project handover you need to handle many things in addition to LCS.
Few more points along with what Nikolaos said -
Deployment process is important to understand as LCS plays major role if they have configured to auto upload and deploy packages in non prod environments, understand that process.
If they are doing it manually what naming conventions they follow etc.
There are lot more things you can do with LCS , for instance doing database export / import from prod environments observing telemetry etc.. although standard documentation is available for all these it's good to get idea from them about what they do.
